It is far more important to make wine that is naturally beautiful than to smooth out any rough edges.
Shortly: a honest product. We lay the foundation in the vineyard. With care, joy, and biodynamic
practices. Following the motto “Let the wine be itself,” we create what we believe is right. Moving away
from uniformity, we create ample space for creativity and new ideas. The wines behind fidesser*orbis
are unfiltered and with minimal sulfur. The absence of any fining agents makes the wines palatable
and unique. Wines that are naturally shaped by what the soil and climate give them – authentic and
distinctive.
Vineyard management
Our vineyards are Demeter-certified and are cultivated biodynamically according to the principles of
Rudolf Steiner.
Vinification
Selective harvest by hand. The grapes are destemmed, pressed after a short maceration period, and
spontaneously fermented. Before the end of fermentation, the wine is bottled, where it then ferments
dry. This creates the natural bubbles = pétillant naturel. After a few months of bottle aging, the Pet Nat
is disgorged and topped up with still wine.
Design
The holistic approach to vineyard management, the influence of flora, fauna, microclimate, and
cosmos, provided the inspiration for the label illustration. Inspired by Leonardo da Vinci’s “De Divina
Proportione,” illustrations of geometric shapes portray the individual character of the fidesser*orbis
wines. They represent the integration of all scientific and spiritual insights within a comprehensive
worldview. The name fidesser*orbis perfectly encapsulates the holistic perspective of biodynamic
farming.
Wine description
Bright, pale red with a slight haze, raspberry and hibiscus aromas, fresh structure, crisp acidity and
